Simple Pesto Pasta

Chicken Pesto Pasta
Easy and quick. And a great way to use up leftover grilled chicken. I hate reading recipes for pasta (especially from people like Gwenyth Paltrow) because - really, you can make it how ever you want. Feel free to ignore, add, or subsititute. And, yes, I am a hypocrite.
Ingredients:
- Leftover grilled chicken, sliced
- Spaghetti or linguini noodles (or any other type of pasta)
- Pesto, approximately 1/4 cup (or enough to coat pasta)
- Feta cheese, crumbled
- Fresh basil, chopped
Directions:
Boil the pasta in water with a touch of olive oil and a dash of salt. While waiting for your water to boil, slice your grilled chicken and chop the basil. (Note: Sliced mushrooms, peas, diced red onion, cherry tomatoes, etc. would also be great additions.) While the noodles boil, put the pesto in a large sauce pan. (If you were adding any other vegetables, you could add them now to the sauce pan and cook until soft.) Place the chiken into the sauce pan and heat on low until heated throughout. When the pasta is cooked, drain and add to the large sauce pan. Stir the pasta until it's coated with pesto, adding a little more if needed. Top with feta cheese and basil. Enjoy!
