A taco inside a Doritos bag. Does life get any better? I can't take credit for this idea. It's a specialty at the dirt track my husband takes our daughters to between hockey seasons. (So many things wrong in that paragraph.)
I thought these tacos, our new Monday night tradition, would be the highlight of my thirties. But the Stomach-Virus-Karma-Gods squashed those dreams. After our very first walking taco night, I spent the next 24-hours hugging porcelain. So long, my dear friend Doritos. And so long, something to look forward to on Mondays.
My homemade version of walking tacos used soy taco meat (it cooks in 5 minutes and you don't have to worry about Mad Cow Disease). But you can use any filler: beans and rice or cooked ground beef/turkey with taco seasoning.
Note, the soy taco meat does contain gluten.
So, how do you make it?
Open up a snack-size bag of Doritos, top with your favorite fixings: taco meat (or gluten-free chili), shredded cheese, shredded lettuce, diced tomato, diced cilantro, chopped avocado, salsa, and sour cream. Then eat it straight outta the bag.
